An apple a day keeps the doc away....Eggless Apple Cake

Do you remember the time when we memorized that proverb "An apple a day keeps the doctor away" well I say, if you have an apple might as well make a cake...and no worries if you don't have eggs or prefer doing away with it and even better if you want to say no to that "self raising flour" and prefer to go healthy with whole wheat flour! Thanks to my friend Madhuri, who shared the recipe:)

The stuff required:

1 apple (wash it, peel it and then grate it) 3/4 cup sugar (regular sugar will do) 1 cup Whole Wheat flour 1/4 cup oil (regular sunflower one will do) 1 tbsp baking powder 1/2 tbsp baking soda 1/2 cup milk 1 tbsp cinnamon powder 1 tsp nutmeg powder

How do you go about making the cake:

Take a pan (preferably non stick pan) on low flame. Add in the sugar and the grated apple and let it cook and keep stirring in between. Then take it off the stove, while it cools, in another bowl sieve together flour, baking powder,baking soda, cinnamon and nutmeg. In another bowl add oil and apple sauce and whisk well until you get a homogeneous mixture. Alternatively add half flour and half milk and incorporate the flour. Take care that the batter is not too thick. Add chopped cashew nuts and almonds. Pour the batter in a greased and flour dusted baking pan and tap it to even the mix. Bake the cake in a pre-heated oven at 180 degrees C for over 30-35 minutes. Let it cool and loosen the edges and enjoy your healthy whole-wheat apple cake!
