Eggless Upside Down Apple Cake
Here's another way to get your little ones to have that apple and eat it too! So there's wholewheat and apple too...only it is upside down!
The Stuff required to make it:
For the apple layer:
2 medium sized apples rinsed, peeled, cored and sliced
3 tbsp organic demerara sugar or brown sugar or powdered sugar
¼ tsp cinnamon powder
¼ tsp nutmeg powder
Couple of drops of lemon juice
For the Cake batter mix
1 cup organic whole wheat flour/atta
½ cup organic all purpose flour/maida
½ tsp baking powder
½ tsp baking soda
1 tsp lemon juice
1 cup water
¼ cup sunflower oil or any neutral tasting vegetable oil
¾ cup powdered sugar
a pinch of salt
½ tsp vanilla extract

HOW TO GO ABOUT MAKING IT
Preheat oven to 180 deg C. First grease or line a round cake pan or tin. Add the layer of apple slices neatly on the base of the pan in single or double layer. Sprinkle the demerara sugar, cinnamon and the nutmeg powder on the apple layer and some drops of lemon juice. above on the apples.

An another bowl add all the dry ingredients and mix them well with a wire whisk, then add the water and oil and stir well to ensure that it becomes a lump-less batter. Add 1 tsp lemon juice and mix again. Pour this batter in the cake pan layered with the apple slices. Bake at 180 degrees C for around 50-55 mins in a preheated oven.
Your eggless upside down apple cake is ready to be served with some hot chai!
