Wholewheat Eggless Cake

School days always mean creating something special for lil A so that she finishes her lunchbox! Its that bit of an incentive, plus I need to make it healthy, which is why I end up baking wholewheat cakes for her, I feel it is a healthy option and feel rewarded when she finishes it!

The stuff you need:

1 cup whole wheat flour
3 tbsp cocoa powder
½ tsp baking soda 
 pinch of salt 
¾ cup brown sugar 
1 cup cold water 
¼ cup oil or melted unsalted butter (I had run out of butter, used oil)
1 tbsp lime juice 
½ tsp vanilla extract or vanilla powder
1/4th cup white chocochips

for the cocoa frosting:
2 tbsp unsalted butter 
3 tbsp cocoa powder 
2 tbsp milk 
3 tbsp sugar 
How to make the cake: 
Grease your cake pan and line it with parchment paper. Preheat your oven to 200deg c. In a bowl, sieve together, wheat flour, cocoa powder, pinch of salt, and baking soda. 
In a separate bowl take the brown sugar(demerra) and add water to it and stir it till it dissolves. To this mix, add the oil/ butter and again mix it well. Add lemon juice and vanilla extract and mix it all again. To this mix slowly add the flour mix and incorporate it well, ensuring that there are no lumps in the batter. Pour this batter into your greased cake pan. I added some white chocochips to this. Bake it on 200 deg C for 35 minutes. Place it on a wire rack to be completely cooled once it is out. 


Frosting:
In a pan, take 2 tbsp of butter and sugar (stove should be on sim) and let the sugar dissolve and switch off the stove.Add the cocoa powder and mix properly. The powder should be mixed correctly. Then add the milk and mix again. Add the milk one spoon at a time, to arrive at your desired thickness consistency. Then spread this on your cake (after it is cooled). I also garnished it with some chocochips again for that extra zing!
