Kiwi delight! Wholewheat Kiwi cake with kiwi fruit toppings and icing
Kiwwwwwwwwwiiiiiiiiiiii A went when she saw me cut the slices of this sweet-sour fruit...it did A sometime to develop a taste for it. For a close friend's baby shower I baked this wholewheat Kiwi Cake topped with icing and some more kiwi slices and it was a hit!
Stuff required to bake the Wholewheat Kiwi Delight Cake
- Half teaspoon baking powder
- Half teaspoon baking soda
- Pinch of salt
- 2 tablespoons of unsalted butter (at room temperature)
- 1 Tbsp vegetable oil
- ½ cup white granulated sugar
- ½ tsp vanilla extract
- ¾ cup yogurt with a little water added to it/ buttermilk
- 1 Kiwi fruit, peeled and sliced (I used Zespri Kiwi)
- 1 – ½ Tbsp white granulated sugar (For topping)
Preheat the oven to 180°C/350°F. Line your baking tray with a greased parchment paper.
In a bowl sift together flour, baking powder, baking soda and salt.
In another vessel cream together butter, oil and sugar. To this add vanilla extract and whisk.
Slowly whisk dry ingredients to the wet ingredients in 2-parts alternating with yogurt/buttermilk, ending with dry ingredients. This batter should not be over mixed.
Pour this batter in your baking tray. You can add Kiwi slices and sprinkle with sugar. Bake for 25-30 minutes or till the toothpick inserted in a center comes out clean.
The cake needs to be fulled cooled before you add the icing.

For icing:
3/4th cup whipping cream
1/4th Cup sugar
Cornflour-2 Tablespoon
Ensure that the whipping cream is freezer for 15 mins prior to this process. Freeze the vessel and the blades of the hand mixer that you will be using. Powder the sugar and cornflour together. Whip the cream till there are peaks formed. Add the powdered cornflour and sugar mix and whip again. Using a spatula and spread the icing. You can decorate it further with kiwi slices and some funfeeti like I did or even add chocochips!
