Going Bananas.............Banana Bread..is not a bread:)

I remember a college friend of mine had written an ode to the humble banana and while today she is  one of the leading child psychologist in Pune, her love for bananas remain. I look out for recipes that are healthy and then try them and I chanced upon the Banana bread recipe when a few friends of mine passed it on as an easy to bake and make dish that my little one can take along in her lunch-box.

So here is the recipe..instead of the recommended sunflower seeds, I added choco-chips, some fun element for my little one. Upon eating the bread, my little one said, "I dont know why you call it Bread, when it is Cake, Amma!":)

So call it by any name, Bread or Cake...Banana Bread aka Banana Cake, thou shall be delicious:) Always!

The stuff required:

Whole wheat Flour-One and half cup
Sugar-Half cup
Ripe Robusta Bananas- Three (cut them and mash them to make a puree)
Baking Soda-Half teaspoon
Baking power Half teaspoon
Oil- Three-Fourth cup (I used Sundrop Sunflower oil)
Vanilla Essence- Two Teaspoon
Choco-chips-(optional) One Tablespoon 
Cashew-nuts- (optional)- Half cup



How do you go about making the banana cake:

First things first, preheat your oven to 180 Degree C, grease the loaf pan and dust with some flour. In your bowl, sift wheat flour, baking soda and baking powder. In another bowl mix well oil, sugar and vanilla. Add your puréed banana to this and mix well, to this add the flour mix. You can add cashew nuts or walnuts if you like the nutty flavour. I added some choco-chips, to get the "chocolate" element that my little one loves. Mix it to make it a thick batter and pour it into the greased loaf pan. Bake it for  40 to 45 mins. Your fantastic banana cake is ready! It makes for a great lunch-box snack!
