Eggless XMas Fruit cake!
The original plan was to bake a plum cake but I never found the time to soak the dryfruits, candied elements in rum, hence I baked the teetotaler version of it...:) The Kerala Xmas Eggless Fruit Cake!
The stuff required to make it:
Maida – 1¼ cups
Baking Soda – ½ teaspoon
Baking Powder – ½ teaspoon
Brown Sugar – 1 cup
Butter – 80 gms, softened
Curd – ½ cup
Warm Milk – ¼ cup
Vanilla Essence – ½ tsp
To Soak
Mixed Dry Fruits - 1¾ cup (a mix of walnuts, cashewnuts, raisins, candied orange, lemon peel etc)
Apple Juice - 1 cup (I used Appy :) , can use Real Apple juice)
The stuff required to make the spice powder
Cloves – 1
Cardamom – 2
Cinnamon – a tiny piece
How to make the Eggless Xmas Fruit Cake!
Soak the mixed dry fruits overnight in Apple juice, after chopping it up.
Making the Cake!
Preheat the oven at 180 deg C. Drain the overnight soaked dry fruits and keep it separately in a bowl. Grind the spice powders with a teaspoon of regular sugar (clove, cardamom and cinnamon) and keep it aside. In a bowl sieve maida, baking powder and baking soda. In another bowl, whisk the softened butter and brown sugar till the mix is fluffy. Add the warm milk, curd and vanilla essence and mix again. Next fold in the sifted flour. The dry fruit mix needs to be coated with 1 tablespoon of maida and then added to the cake batter along with the spice powder. In a greased parchment lined cake pan, pour the batter and bake it for 35-40 mins in the preheated oven at 180 Deg C. Your Yummy Eggless Xmas fruit cake is ready! Enjoyyy!
